Cowboy Coffee Cake

I have been blessed to have many good cooks in my circle of family and friends. Somehow, I am always coming away from visits with a new recipe that was served to me. Cowboy Coffee Cake is one of those recipes. I've been making it for years and we never grow tired of it.


The ingredients for Cowboy Coffee Cake are ones you are sure to already have on hand. It can even be assembled the night before and refrigerated until ready to bake.   


When I know we will have guests staying overnight, this is my go-to recipe.  My kids come running when they smell this coffee cake in the oven. There is something so comforting about the aroma of butter and brown sugar.



Cowboy Coffee Cake 

Here's what you'll need:

2 1/2 cups flour
1/2 tsp. salt
2 cups brown sugar
2/3 cup butter
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 cup sour milk (regular milk with 1 Tbsp. vinegar added to it, and let sit for about 10 minutes)
2 well-beaten eggs

Here's how you make it:

 Preheat oven to 375 degrees. Mix the flour, salt, brown sugar and butter together until crumbly, setting 1/2 cup of mixture aside. To the remaining crumbs add the baking powder, soda, cinnamon, sour milk and beaten eggs. Pour into a well-greased 9 X 13 pan. Sprinkle the top with the reserved crumbly mixture. Bake for 25-30 minutes or until toothpick comes out clean.


Serve it for breakfast or for a yummy pick-me-up snack in the afternoon. Most importantly, serve it with a smile. :-)
