Bunco Salad

Many years ago, I was in a Bunco group with several sweet ladies.  They were all really good cooks too.  At each monthly get together, we would bring some kind of food to share with the group. One month a lady brought this easy-to-make, packed-with-flavor salad. 

I could not get enough of it.  The scrap of paper I jotted down the ingredients on has sat unused for way too long in my recipe box.  I brought it out to see if this salad was as good as I remembered. And let me just say, YES! It is just as delicious as the day I first put it in my mouth all those years ago.
Here's what you need: Spring Mix bagged salad, Italian dressing mix, olive oil, balsamic vinegar, walnuts, gorgonzola cheese and a pear
In bowl, toss together the salad mix, chopped pear, walnuts and gorgonzola cheese.

Mix up dressing according to packet instructions using olive oil and balsamic vinegar. Pour over salad and toss to coat. This salad is really good with grilled chicken mixed into it too. The strong gorgonzola cheese and sweetness of the pears pairs nicely with the chicken. How's that for a sweet homophone? {pears and pairs}
Bunco Salad

1 Package Spring Mix
1/2 cup chopped walnuts
1/2 cup Gorgonzola cheese
1 pear or apple chopped
1 packet Italian dressing mix
olive oil
balsamic vinegear
water

In bowl, mix together Spring Mix, walnuts, gorgonzola cheese and chopped pear. Follow the directions on the packet of Italian dressing, except use balsamic vinegar and olive oil in place of the vinegar and oil. Shake it up in a jar or other container with a tight lid. Pour over salad and toss to coat.  You will need to either eat all the salad, as it does not keep well with the dressing on it, or pour the dressing on individual servings.
