Disappearing Pumpkin Muffins

Disappearing Pumpkin Muffins are one of our favorite foods to wake up to in the fall.  Not only do they smell heavenly while they are baking, but they taste incredible too.  They are moist, full of flavor and turn out perfect every time.
We call them "disappearing" because that's what they do.  I'll make a batch and turn around to find that they are 1/2 gone within a few minutes.
Here's what you need: sugar, oil, eggs, canned pumpkin, brown sugar, salt, nutmeg, ground cloves, cinnamon, baking soda, water and chocolate chips
Here's how you make them:
In a large mixing bowl, combine sugars, oil, and eggs.

Add in the pumpkin and water, stirring to incorporate.
In separate bowl, combine the dry ingredients.
Add to the pumpkin mixture and stir to combine.
Add in chocolate chips. (Did you know you can keep the chips from sinking in the batter if you coat them in flour first?)
Spray muffin tins with a baking spray and fill 2/3 full with the batter. Bake for 20 minutes in 350 degree oven.
Let the muffins cool for a couple of minutes in the pan, then transfer to a cooling rack.

Disappearing Pumpkin Muffins
 ~ Make 15 standard-sized muffins

3/4 cup sugar
1/2 cup oil
2 eggs
1 cup pumpkin
3/4 cup brown sugar
1 3/4 cups flour
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1 tsp. baking soda
1/3 cup water
1/2 to 1 cup mini chocolate chips

Preheat oven to 350 degrees. In large mixing bowl, combine sugars, oil, and eggs. Add in pumpkin and water, stirring to incorporate. In separate bowl, mix together dry ingredients.  Add to pumpkin mixture. Stir in chocolate chips.  Spray muffin tins with baking spray and fill each cup 2/3 full.  Bake for 20 minutes.  {If making this into a loaf, bake for 1 hour.}
My family likes the chocolate chips included, but they are just as lovely without them. Enjoy these with a nice cup of coffee or a tall glass of milk.  I like mine with a little bit of butter too. You should probably squirrel one away for yourself to make sure you get one. ;-)
