Ozark Apple Cake

"She could peel an apple...in one long, curly strip. The whole apple."  Can you guess who said this and in what movie?  I remember watching my MaMaw peel apples this way when I was little, and practicing every chance I got to perfect this skill. Today, as I made this delicious Ozark Apple Cake, I was able to put this into practice and my mind took me back to a sweet memory of my MaMaw.

This old-fashioned recipe uses simple ingredients, all of which you'll usually have on hand.

Here's what you need:
sugar, brown sugar, butter, eggs, flour, baking soda, cinnamon, water, vanilla, salt, chopped apples, pecans
Here's how you make it:
Cream sugars and butter together in mixer. Add in the eggs and beat for 1 minute.
Sift flour, baking soda, cinnamon and salt together. Add to creamed mixture and stir until combined. 
Stir in water, vanilla, apples and pecans.
Spoon into greased 9x13 in. pan and bake for 35- 40 minutes.

Cut into squares and serve with whipped topping or vanilla ice cream.

 Ozark Apple Cake

3 cups finely chopped peeled apples

Add water, vanilla, apples and pecans, stirring to mix. Spoon into greased 9x13 cake pan. Bake at 350 degrees for 35-40 minutes or until cake tests done with toothpick. May serve with whipped topping or vanilla ice cream.

The aroma of the baking apples, butter and sugar is swoon-worthy.  It is best served warm with ice cream or whipped topping, but tomorrow I will share with you something that will take this yummy fall treat to a whole new level...Lee's Caramel Frosting.
