Easy Cheezy Baked Ziti

After a cold (relatively speaking) weekend, I want nothing more than to face Monday with a big 'ol plate of comfort food.  For me, this Easy Cheezy Baked Ziti is exactly what I go to on days when I want something cheesy and warm and full of homemade goodness.
Here's what you need:
Penne or Ziti pasta, jar of spaghetti sauce, mozzarella cheese, ricotta cheese, Romano or Parmesan Cheese, egg, Italian seasoning
Here's how you make it:
In a large mixing bowl stir together 1 1/2 cups spaghetti sauce, ricotta cheese, 1 1/2 cups mozzarella cheese, beaten egg and Italian seasoning. In the meantime, cook pasta according to package directions.
Stir sauce ingredients until completely combined.
After you've cooked your pasta and drained it, return to pot and pour in your cheesy sauce mixture.
Stir until completely incorporated and pour into 13 x 9 pan, sprayed with cooking spray.
Pour the rest of the jar of spaghetti sauce across the top of the pasta.
Spread the spaghetti sauce all across the top.
Sprinkle with remaining mozzarella cheese and 1/2 cup of Parmesan or Romano cheese. Place into 375 degree oven and bake for 30 minutes. Allow to rest for 15 minutes before serving.
Easy Cheezy Baked Ziti
serves 6-8

1 (16 oz.) box of Penne or Ziti Pasta
1 (15 oz.) tub of ricotta cheese
1 (32 oz.) jar of favorite spaghetti sauce
3 cups of mozzarella cheese (divided)
1/4 to 1/2 cup grated Romano or Parmesan cheese
1 beaten egg
1 tsp. Italian seasoning

Preheat oven to 375 degrees. Bring a large pot of salted water to a boil and add the pasta. Cook 8 to 10 minutes or until al dente. Drain and set aside. In a large mixing bowl, combine beaten egg, ricotta cheese, 1 1/2 cups mozzarella cheese, 1 1/2 cups spaghetti sauce, and Italian seasoning. Add this mixture to the pasta and stir to incorporate. Pour pasta and cheese mixture into a 13 x 9 pan sprayed with baking spray. Pour remaining spaghetti sauce over the pasta and spread across the top. Sprinkle remaining mozzarella cheese and Parmesan or Romano cheese over the top. Bake for 30 minutes. Remove from oven and let rest for 15 minutes before serving. This freezes well before baking too.
(Funny story~ The last time I made this and took these pictures I thought I was making it to give to my neighbor who I mistakenly had thought had a baby. I didn't know she was even pregnant, but saw the "It's a Girl" poster on her front door and had seen a lot of activity in the days leading up to seeing the poster. I asked my husband and he confirmed that he knew she was pregnant from speaking with her husband a while back. But, he thought it was too soon for her to be having the baby. Still, there was the sign, so I made a meal...this Easy Cheezy Baked Ziti. When I was getting ready to put it in the oven I asked my husband if I should bake it or give it to them as is so they could freeze it to use later. He said, "Let's not give it to them and we'll eat it for dinner." A little bit taken aback by his "selfishness" I conceded as I didn't have another plan for dinner and I hadn't confirmed what was going on with the neighbors. The next day I saw the neighbor outside and asked if his wife had had their baby and if congratulations were in order. To my relief, he told me that his SIL had had a baby girl and that they were staying next door because she was in the NICU and they lived 2 hours away. Whew! The good news is that that sweet little girl is just fine and was able to go home. He also confirmed that his wife was indeed pregnant with their 4th boy and that the baby wasn't due until March. I'm so glad I listened to my husband and didn't show up there with pink balloons and a girly baby gift. However, I probably still should have given them the meal. It would have been the neighborly thing to do. Oh, well....next time. At least I still have time to come up with an appropriate baby gift and I know exactly what meal I will take them when it is time.)
