Around our house, Nutella is a staple. My daughter has never been a fan of PB & J sandwiches, mostly because of the "j"...jelly. One day we were at my good friend's house having lunch and she offered up the PB & N sandwich. The "n" being Nutella. Angels sang! It was like eating a Reeses Peanut Butter Cup sandwich. Well, it started getting out of hand when it was requested every day. I had to add a little something healthy to it. Thus began the PB&N sandwich with the "b" being banana. Whew! That's a long story getting to this recipe which is a takeoff from our beloved sandwich. This Peanut Butter, Banana and Nutella Bread is divine. There is no other word for it. I went looking online to see if there were any recipes for this already and I found one here. I must say that Sally's version looks mighty tasty, but I had to go with what I had on hand. I tweaked her recipe a bit to suit my ingredients.
Here's what you need:
flour, salt, baking soda, baking powder, peanut butter, Nutella, overripe bananas, oil, egg, brown sugar, white sugar and chocolate chips
Next, take half of the Nutella and swirl it into the batter in the pan.
Pour the rest of the batter into the pan and repeat the swirling process with the remaining Nutella. Bake at 350 degrees for 45-50 minutes. (Probably closer to the 45 minute mark, as mine got a wee bit toasty)
Peanut Butter, Banana and Nutella Bread
3 very ripe, mashed bananas
1/2 cup creamy peanut butter
1/4 cup vegetable oil
1/3 cup sugar
1/4 cup brown sugar
1 1/2 cups all purpose flour
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup semi-sweet chocolate chips
3 Tbsp. Nutella
Preheat oven to 350 degrees. In a medium bowl, stir together the flour, baking soda, baking powder and salt. Set aside. In a large bowl, mix together bananas, peanut butter, oil, egg and sugars. Combine dry ingredients and wet ingredients and stir until just combined. DO NOT OVERMIX. Fold in chocolate chips. Spread half of the batter into loaf pan sprayed with baking spray. Drop 1 1/2 tablespoons of Nutella on top of bread in a row. Swirl with a knife. Pour remaining batter into pan and drop the rest of the Nutella on top and swirl with a knife. Bake for 45 to 50 minutes or until toothpick inserted into center comes out clean. Let cool in loaf pan for 10 minutes, then transfer bread to a cooling rack.
