Quick & Easy BBQ Chicken Pita Pizza

Does anyone else feel like life is moving faster than a speeding bullet? Hubby is out of town, so I'm the go-to person for everything right now...school (that's a given), sibling squabbles, sports practice chauffeur, errand runner, etc. Somehow it just seems like the more responsibilities you have the faster time flies. Do you realize Thanksgiving is just 6 weeks away?!?!? SIX WEEKS! Unbelievable!
With all that's on my plate at the moment, this Quick & Easy BBQ Chicken Pizza is a great weeknight dinner to pop in the oven (or even toaster oven) and have ready in a flash. This is especially fast if you have cooked chicken readily available. I like to cook up a few breasts in the crockpot at the beginning of the week so I have it ready for wraps, little pizzas or even casseroles.
Here's what you need:
pitas, cooked and shredded chicken, mozzarella cheese, barbecue sauce, and fresh spinach(torn into small pieces)
To make these pita pizzas simply spread some barbecue sauce on the pita, arrange the cooked chicken and torn spinach on top and sprinkle with cheese. Bake in oven until the cheese is melted and pita is warmed through. Serve with extra barbecue sauce and a side of ranch dressing.  Like the name says...quick and easy. I like the sound of that!
