Chicken Tortilla Soup
Nothing gets me in the mood for soup faster than a cold snap in the weather. We've had another one this weekend and I had a hankerin' for Chicken Tortilla Soup. That, and I had all the ingredients, so it wouldn't take a lot of effort to get dinner on the table ;-) I've noticed a lot of bloggy friends have been making their own versions of tortilla soup this week too, even my mom. It must be in the air.
1 (32 oz.) carton of chicken broth
1 (10 oz.) can Rotel (diced tomatoes with green chiles)
1 (8 oz.) can tomato sauce
1 (15 oz.) can black beans
1 cup frozen corn
2 cups cooked shredded chicken
1 Tbsp. taco seasoning
1 tsp. minced garlic
3 Tbsp. minced onion
1 tsp. Worcestershire sauce
Saute onion and garlic for a few minutes. Add Rotel, tomato sauce, black beans, frozen corn, chicken broth, chicken, taco seasoning, and Worcestershire sauce. Cover and simmer, stirring occasionally, for 30 minutes or more. Serve with shredded cheese, sour cream and crushed tortilla chips.
This soup totally hit the spot this weekend. I've had it for dinner and lunch twice...it's that good! What's your favorite easy-to-make soup this time of year?
