Chicken Tortilla Soup

Nothing gets me in the mood for soup faster than a cold snap in the weather. We've had another one this weekend and I had a hankerin' for Chicken Tortilla Soup. That, and I had all the ingredients, so it wouldn't take a lot of effort to get dinner on the table ;-) I've noticed a lot of bloggy friends have been making their own versions of tortilla soup this week too, even my mom. It must be in the air.
Here's what you need: chicken broth, Rotel, tomato sauce, black beans, frozen corn, cooked and shredded chicken, taco seasoning, minced garlic, minced onion and Worcestershire Sauce, sour cream, shredded Colby Jack cheese, and tortilla chips.
I will not go into the step by step on this because it all goes so quickly. I sauteed the onions and garlic for a couple of minutes, then dumped in the rest of the ingredients, except the cheese, sour cream and tortilla chips. Stir to combine and put a lid on the pot. Simmer for about 30-45 minutes, stirring from time to time. Top with the cheese, sour cream and tortilla chips. That's it!
Chicken Tortilla Soup

1 (32 oz.) carton of chicken broth
1 (10 oz.) can Rotel (diced tomatoes with green chiles)
1 (8 oz.) can tomato sauce
1 (15 oz.) can black beans
1 cup frozen corn
2 cups cooked shredded chicken
1 Tbsp. taco seasoning
1 tsp. minced garlic
3 Tbsp. minced onion
1 tsp. Worcestershire sauce
shredded cheese
sour cream
tortilla chips

Saute onion and garlic for a few minutes. Add Rotel, tomato sauce, black beans, frozen corn, chicken broth, chicken, taco seasoning, and Worcestershire sauce. Cover and simmer, stirring occasionally, for 30 minutes or more. Serve with shredded cheese, sour cream and crushed tortilla chips.

This soup totally hit the spot this weekend. I've had it for dinner and lunch's that good! What's your favorite easy-to-make soup this time of year?
