Crazy Ranch Crackers

With the cold snap we had this week, hot chocolate was definitely in the cards for us. We needed a little snack to go with it too. I remembered one of my friends' moms would make a delicious savory snack from oyster crackers to give out each year at Christmas. I'm not sure what all she put in her crackers, but I did a little combo of a couple of recipes and came up with this one for Crazy Ranch Crackers.
Here's what you need: 1 bag of oyster crackers, oil, packet of Ranch style dressing mix and Parmesan cheese

Here's how you make it:
Combining the oil, ranch and parmesan cheese in a large mixing bowl. Stir in the bag of crackers, turning to coat each piece. Pour into jelly roll pan with sides and spread out. Bake for 15-20 minutes in preheated 225 degree oven.  Enjoy warm from the oven or cool, then place in airtight container.
Crazy Ranch Crackers

1 (1 oz.) package Ranch dressing mix
1 bag Oyster Crackers
1/4 cup oil
1/4 cup Parmesan cheese

Preheat oven to 225 degrees. In mixing bowl, combine the Ranch dressing mix, oil and Parmesan cheese. Stir in the oyster crackers to thoroughly coat. Spread evenly onto baking sheet with sides (jelly roll pan). Bake for 15 to 20 minutes, stirring after 10 minutes. Remove from oven and cool. Store in airtight container.
Not only are they a yummy snack, but these Crazy Ranch Crackers would be a great addition to soups or salads. They also would made a great little teacher or neighbor gift for Christmas. We enjoyed ours by the fire with a big mug of hot cocoa. The salty and sweet combination just can't be beat.
