Easiest Mac 'n' Cheese

With the cold weather we're having, all I can think of making is warm, delicious comfort food. One of our favorites is macaroni and cheese. I learned to make it as a kid with Velveeta, but when I came across this recipe for the Easiest Mac 'n' Cheese the other day, I just knew it was going to be my new BFF. It is 3 ingredients, people. Three ingredients! (Unless you add the cracker topping, then it is 5.)
Here's what you need: box of pasta, jar of Alfredo sauce, cheddar cheese.
Cook pasta according to package and drain. In the same pan, heat up the Alfredo sauce.
Add in the shredded cheddar cheese. Stir until melted.
Return the pasta to the pan and thoroughly mix with the cheese sauce.
You can serve it just like this or add a topping and bake.
For the topping, crush 10 Ritz crackers and mix with 1 teaspoon melted butter. Pour the pasta with sauce in a greased casserole dish and sprinkle with the cracker topping.
Bake at 350 degrees for 10-15 minutes, until topping is golden.

Easiest Mac 'n' Cheese

1 (12 oz.) box of pasta ~ I used shells.
1 (15 oz.) jar of prepared Alfredo sauce
10 oz. shredded cheddar cheese

Cook pasta according to box directions; drain and set aside. In same pan, heat the Alfredo sauce for a few minutes. Add in the cheddar cheese and stir until melted. Return the pasta to the pan and stir to coat. Salt and pepper to taste. Place in casserole dish to serve or sprinkle a mixture of cracker crumbs (about 10 Ritz) and 1 tsp. melted butter over the top and bake for 10 to 15 minutes until the crumb topping turns golden.

I was so impressed with this simple, but delicious recipe. Everyone in the family liked this cheesy dish...even the one who insists on having the blue box of mac'n'cheese. ;-)

    My kids only love the old Stouffer's version of mac and cheese, even though I have made the old-fashioned labor intensive version that my grandmother used to make!
    But this version looks like Stouffers, but is probably much, much better! I also love the added two ingredients for the topping. That extra crunch makes such a difference!

  10. I read this the other day and said...of, when will I make that...umm, I just went to the store and bought the light Romano Alfredo and another jar of Pablano Pepper Alfredo. There were so many choices and I am making this for a buffet at my son's birthday party to go with some Chicken Tortilla soup and corn bread. How great!!! Thanks for the idea :)
