Crusty Parmesan Chicken

Hi Friends!
Sorry I was MIA yesterday. I was having too much fun hanging out with my mom and dad who came out for a quick visit and to see my kiddos in their piano recital today. Mom and I did a little shopping at Home Goods and then found some treasures at a local resale shop too. Between shopping, eating and fiddling with my entryway Valentine's vignette, my time got eaten up.
What I had planned on sharing with you was this yummy recipe for Crusty Parmesan Chicken that we had this week. I think this recipe originated from Hellman's or Best Foods. It's one of those recipes you scribble down on paper and stick in your recipe box for a rainy day. In our case, it was a wintry-mix day that cried out for this deliciously moist chicken.
Here's what you need: boneless chicken breasts, mayonnaise, parmesan cheese, plain breadcrumbs, garlic salt and Italian seasoning (or you can replace the last three ingredients with Italian breadcrumbs)
Start by combining the mayonnaise and Parmesan cheese in a bowl.
Place the chicken breasts in a lightly greased glass pan and spread the mayo/cheese mixture on top of the chicken.
Sprinkle the breadcrumb mixture (breadcrumbs, garlic salt and Italian seasoning) all over the chicken.
Bake in 425 degree oven for 20-25 minutes.
Crusty Parmesan Chicken

4 thin cut chicken breasts
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
2 Tbsp. plain bread crumbs
1/2 tsp. Italian seasoning
1/4 tsp. garlic salt
{substitute Italian bread crumbs for last three ingredients}

Preheat oven to 425 degrees. In small bowl, combine mayonnaise and Parmesan cheese and set aside. Place chicken breasts in lightly greased glass pan. Spread the mayo/cheese mixture on top of the chicken. Sprinkle the bread crumb mixture (bread crumbs, Italian seasoning and garlic salt) over each chicken breast. Bake in oven for 20-25 minutes until crust is golden brown and chicken is done.

What I admire about this recipe is its simplicity. If you have the Italian breadcrumbs, you're talking four ingredients for a delicious main dish. My kids absolutely loved this chicken. It was moist and full of flavor. They even asked for it to be put into the rotation of meals. That's a winner in my book any day!
