Garlic Roasted Cauliflower

Sweet, savory, sweet...what comes next? You guessed it! A savory recipe is what I'm sharing today. Garlic Roasted Cauliflower. I told you I hadn't made it out of the kitchen this week ;-)
Unfortunately, I don't have any ingredient pictures or many of the process. But this was an incredibly easy and delicious way to make cauliflower.
Start by cutting up a head of cauliflower into florets and putting in a large ziplock bag. Drop in a couple of teaspoons of minced garlic and pour in about 3 tablespoons of olive oil. Sprinkle with salt and pepper. Seal the bag and shake, shake, shake! Pour the contents of the bag into a lightly greased casserole dish.
Bake in a preheated 450 degree oven for 25 minutes, stirring halfway through. Remove from oven and sprinkle some Parmesan cheese on top. Return to oven for 5-10 minutes.

See how easy that was! I have always been intimidated by the cauliflower, but not anymore. My kids even ate this delicious side dish. I'm really working hard to move all of us into eating a bigger variety of veggies. This is definitely in the lineup from now on! If you haven't roasted cauliflower before, I highly recommend this method. Are there any seemingly normal vegetables that intimidate you?   7. I'll have to admit I'm not big on the cauliflower, but this does look kinda good - I've also heard folks use them to make mashed "potatoes"

    This reminds me of the fried cauliflower that I've made before to put on top of salads. I'm going to give your recipe a shot since I know baking is much healthier than frying. I just purchase cauliflower yesterday, so I have all the ingredients on hand. Thanks for sharing!

  21. Hi Nici, just wanted to let you know I made this tonight with some Italian breaded pork, french bread and mashed potatoes. I know, no green, but everyone liked it, so it was a hit.
