Oatmeal Chocolate Chip Cookies

We love chocolate chip cookies in this house. I almost always just make the recipe on the back of the chocolate chip package. However, I came across this recipe for Oatmeal Chocolate Chip Cookies at the Charm of Home right before Christmas and just knew I had to try it. We had either eaten or given away all of our Christmas cookies and needed some for the big day.

Here's what you need: butter, oil, egg, sugar, brown sugar, vanilla, flour, quick oats, baking soda, salt and chocolate chips
Here's how you make it: start by creaming together the butter, oil, sugar and brown sugar.
Add in the egg and vanilla, mixing well.
In a separate bowl, combine flour, oats, salt and baking soda.
Add to the butter/sugar mixture, stirring to combine.
Finally, stir in the chocolate chips.
Drop by teaspoon onto ungreased baking sheet with baking mat or parchment paper. Bake at 375 for 8-10 minutes or until tan in color.
Oatmeal Chocolate Chip Cookies
(adapted from The Charm of Home)

1/3 cup softened butter
1/3 cup vegetable oil
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1 tsp. vanilla
1 3/4 cup flour
1/2 cup quick oats
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chocolate chips

Preheat oven to 375 degrees. In large mixing bowl, cream together the butter, oil and sugars. Add in the egg and vanilla, combining thoroughly. In separate bowl, mix together the flour, quick oats, baking soda and salt. Gradually add the dry ingredients to the butter/sugar mixture. Stir in the chocolate chips. 
Drop by teaspoonfuls onto ungreased baking sheet lined with parchment paper or a baking mat. (I actually rolled some of mine into balls and preferred the look when baked). Bake for 8-10 minutes, until the cookies are tan in color. Remove from oven and cool completely on parchment paper or wire rack. Makes about 2 dozen cookies.
I had never make chocolate chip cookies with oil before and was really pleased with how they turned out. These cookies disappeared quickly and I'm pretty sure they'll be requested again very soon.
