Chicken Broccoli Rice Casserole

Nothing says "love" like a dish of comfort food. Can I get an "Amen"? That's why I made this Chicken Broccoli Rice Casserole for our Valentine's dinner last night. It warmed the tummies and the hearts of my sweeties.
Here's what you need to make it: cooked chicken, cooked broccoli, rice, yogurt, cream of chicken soup, milk (not pictured), lemon juice and garlic salt (also not pictured)
Start by combining the chicken, rice and broccoli in a large mixing bowl.
Add in the cream of chicken soup, milk, yogurt, garlic salt, and lemon juice, stirring to combine.
Follow up with 1 cup of the shredded cheese and then the almonds.
Once thoroughly combined, transfer to your baking dish. Sprinkle with remaining cheese and bake for 30 minutes, or until cheese is melted and casserole is heated through.
Chicken Broccoli Rice Casserole
2 cups cooked chicken
4 cups cooked rice
1 can cream of chicken soup
1 cup non-fat plain yogurt
1-2 cups cooked and chopped broccoli florets
1/2 cup milk
1 Tbsp. lemon juice
1 tsp. garlic salt
1 1/2 cups shredded cheese
1/3 cup sliced almonds

Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray. Combine chicken, rice, broccoli, soup, milk, yogurt, garlic salt, and lemon juice in large mixing bowl. Add in 1 cup of shredded cheese and almonds, stirring to combine. Pour into prepared pan and sprinkle with remaining cheese. Bake for 30 minutes.
What I love most about this casserole, besides the yummy cheesiness, is the little bit of crunch from the almonds. The meal came together fairly quickly, as I had cooked up the chicken earlier in the week and frozen it. All I needed to do was cook up the rice and microwave the broccoli for a few minutes before combining all the ingredients. With a little forethought, I had a delicious meal to serve up to my sweethearts without a ton of work. Did you make a nice Valentine's meal for your family?
