(serves family of four)
2 boneless, skinless chicken breasts
1 Tbsp. taco seasoning ( I love Trader Joe's taco seasoning)
1/2 can Ro-tel or tomatoes with green chiles
Place chicken breasts in slow cooker or crock-pot. Sprinkle with taco seasoning. Pour tomatoes over the top. Cook on high for 2-3 hours or low for 5-6 hours, or until chicken is done. Remove the chicken from crock-pot and shred. Return to crock-pot and combine with the tomatoes. Spoon into taco shells or tortillas and serve with your favorite taco toppings. This recipe can be easily doubled or tripled to serve more people and it is easy to turn up the heat if your crowd likes it with a little more spice.
