Sweet Mandarin Salad
I'm not sure about where you live, but here in Texas we're starting to get a taste of warmer weather.  When the temperature starts soaring, my mind goes to "cool" eating. One of our favorite warm weather salads is this Sweet Mandarin Salad. It is the perfect pairing for grilled meats and is a great salad to take to a party.

Here's what you need for both the salad and the dressing: romaine lettuce, bacon bits, sliced almonds, green onions, 1 sm. can mandarin oranges, olive oil, sugar, Tabasco sauce, cider vinegar, and salt.

Sweet Mandarin Salad

Dressing:
1/4 cup vegetable oil (I used olive oil)
2 Tbsp. sugar
Dash of Tabasco sauce
2 Tbsp. cider vinegar ( I used Apple Cider Vinegar)
1/2 tsp. salt

Salad:
1/4 head iceberg lettuce
1/4 head romaine lettuce ( I used about 2 romaine hearts instead of the 2 lettuces)
1/4 cup bacon bits or crumbled bacon
1/4 cup sliced almonds
2 green onions sliced
1 can mandarin oranges (drained)

Combine dressing ingredients first and allow to chill in refrigerator for at least 30 minutes. Assemble the salad and wait to pour the dressing over until just before serving. Toss to coat evenly. Serve immediately.
We enjoyed this salad last week with the Tangy Oven BBQ Chicken and a simple pasta. It really is a favorite in this house. The first time I had it at a church potluck, I knew I had to have the recipe.  It always puts a smile on my face.
