Blueberry Oatmeal Coffee Cake

Hi there, friends! Have you had a nice weekend so far? We are getting a reprieve from baseball this weekend. The tournament got cancelled due to not having enough teams sign up. Picture me doing the happy dance right now! To celebrate, I made up a little Blueberry Oatmeal Coffee Cake. Well, to be honest, I didn't really need an excuse other than I had some blueberries that needed to get eaten.
Here's what you need: boiling water, oatmeal, butter, flour, sugar, brown sugar, baking soda, salt, vanilla, eggs, cinnamon, and blueberries.
In large bowl, pour boiling water over the dry oatmeal and butter.
Allow to sit for 20 minutes.
Add in remaining ingredients.
Fold in blueberries and pour into prepared pan. Bake for 40 minutes in 350 degree oven.
Meanwhile, stir together streusel ingredients.
The aroma coming from the oven is amazing, by the way. I almost dug into this cake right out of the oven without the streusel on top. Then I remembered the old saying, "Good things come to those who wait."
So, next you'll need to sprinkle the streusel topping all over the cake and return to oven. Bake for another 5 minutes or so. Be prepared for a moist, berrylicious "good thing".
Blueberry Oatmeal Coffee Cake
Serves 9-12

Cake
1 1/2 cups boiling water
1 stick (1/2 cup) butter
1 cup oatmeal
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 1/2 cups flour
1 to 1 1/2 cups fresh blueberries

Topping
1 Tbsp. melted butter
2-3 Tbsp. flour
1/2 tsp. cinnamon
1/3 cup brown sugar

In large bowl combine butter, oatmeal and boiling water. Allow to sit for 20 minutes. Meanwhile, preheat oven to 350 degrees. Grease and flour 9x9 inch pan. When the 20 minutes is up, add remaining cake ingredients and mix thoroughly. Pour into prepared pan. Bake for 40 minutes, or until done. Combine topping ingredients and sprinkle over the cake. Return to oven for 5 minutes.
All right, friends, I have a confession to make. It has been really hard not to eat this whole pan by myself. This coffee cake is perfect for breakfast. (It's healthy, right? I mean, it's got oatmeal and blueberries in it. It's practically health food.) It makes a great afternoon snack. And, don't even get me started with heating it up and plopping a scoop of ice cream on top! Mercy. Do yourself a favor and make up a pan this weekend. Your tummy will thank you... and so will everyone else.

  12. I love putting oatmeal in things to make it healthy. I have a choc chip cookie recipe that calls for oatmeal which I feel justifies that it is healthy :) This looks way healthier!!
