Italian Beef Sandwiches- Crock-Pot Style
Bottom Round Roast
1-2 cans Beef Broth
1 onion cut in large chunks
1 green bell pepper, sliced
1 packet Italian Dressing mix
Salt and pepper
Salt and pepper roast. Place in crock-pot with onions and beef broth. Cook on high for 1 hour, then turn down to low for several hours. About 30 minutes before eating, remove the roast and shred the beef. Return to the crock-pot and pour in Italian dressing mix and sliced peppers, stirring to combine. Cook until peppers are softened a bit. Serve on a hoagie roll with sliced provolone or mozzarella cheese.
* I will usually add in my Italian Seasoning and peppers a couple of hours before I'm ready to serve so that the peppers are nice and soft.
