Mud Pie Mocha Brownies

Happy Monday to you! I have to say, I am feeling quite refreshed after the beautiful rain we got yesterday and all that we should get today. Anytime the weather takes a turn like this it makes me want to bake something. So, bake something I did... these Mud Pie Mocha Brownies!

I have to tell you they were a bit of an experiment and got mixed reviews...my son wouldn't touch them because there is coffee in the frosting and pretty much everyone else loved them. I also didn't get any process photos.
Mud Pie Mocha Brownies

1 Family-size brownie mix and all the ingredients according to package instructions
1-2 cups Chocolate cookie crumbs (like Oreos)
1 stick butter, softened
3 cups powdered sugar
1/4 cup cocoa
1/8 tsp. salt
1/4-1/3 cup brewed coffee (cold)
1 tsp. vanilla

Preheat oven to 350 degrees. Mix up brownie batter according to package directions. Stir in 1 cup of cookie crumbs. Pour into 13x9 inch pan and bake according to package. Allow to cool completely.
For frosting, in large mixing bowl, combine butter, powdered sugar. salt, cocoa and vanilla. Slowly pour in brewed coffee and mix until smooth and spreadable. Fold in 1/3-2/3 cup cookie crumbs. Spread over cooled brownies. Sprinkle remaining cookie crumbs over the brownies.
The real reason I made these brownies was to use up some chocolate sandwich cookies that were not being eaten and getting stale in the pantry. While they were very tasty, the kiddos wouldn't eat them because they tasted so different than Oreos (in their minds).  Anyway, I didn't want them to go to waste and thought I might as well make them into a dessert to share with others. Thankfully, I was able to do just that and I wasn't "forced" to eat them all myself. ;-) These Mud Pie Mocha Brownies were easy to prepare and decadent in flavor. Now that's my kind of combo!
