Confetti "Chicken" Salad

Do you ever get in a lunch rut? We do. I get pretty tired of the same old sandwiches week in and week out. We rotate between turkey and/or ham sandwiches, PBJ, and sometimes tuna salad. If we're having friends over, I might bust out a chicken salad...you know the kind with grapes and mayonnaise. While I do love a good chicken salad, I love variety even more. Last week, I remembered this Confetti "Chicken" Salad recipe that my sister-in-law had shared with me several years ago.

The reason the chicken is in quotes is that it's not really chicken at all. This salad is actually made with turkey lunchmeat. Specifically, Boars Head Low Sodium Turkey. However, I have applied the recipe to some leftover chicken I had and it turned out wonderful too. My favorite thing, besides the flavor of this salad, is the confetti of colors! Aren't these veggies just gorgeous?

Here is what you need: Boars Head Low Sodium Turkey sliced thin, carrots, red onion, celery, Grey Poupon, mayonnaise, salt, pepper and sage.
I like to use one of my favorite kitchen gadgets to make this salad, as all the veggies are cut in uniform sizes and it goes very quickly.

Stir up all the ingredients.

Add in the mayo, Grey Poupon and spices. Scoop about 1/2 cup salad mixture onto 12 grain bread and enjoy!
Confetti "Chicken" Salad (makes about 4 servings)

1/2 lb. Boar's Head Low Sodium Turkey Breast (sliced thin) or leftover cooked chicken or turkey, cubed
1/3 cup mayonnaise
1 Tbsp. Grey Poupon
1/4 cup each diced carrots, celery and red onion
salt and pepper
pinch of sage

Dice turkey, carrots, celery and red onion. Combine together with Grey Poupon, mayonnaise, salt, pepper and sage. Spoon onto hearty 12 grain bread.

I plan on keeping this recipe handy during the holidays too, when we have leftover turkey! Hard to believe we'll be planning our Thanksgiving menus soon. It will be here before we know it! Have a great day, friend!
