Egg-Free Chocolate Zucchini Cake
What? No Eggs!?!? That's right! I went looking through my trusty recipe box and found this gem from my MIL...Egg-Free Chocolate Zucchini Cake. It is moist, delicious and helps work through that bounty of zucchini you've received from your garden, even if you don't have any eggs in the refrigerator.
Here's what you need: butter, oil, sugar, vanilla, buttermilk, flour, cocoa, baking soda, salt, baking powder, cinnamon, cloves, finely shredded zucchini, chocolate chips, and pecans.
Start by creaming together the butter, sugar and oil. Beat in the buttermilk and vanilla. Slowly add in the dry ingredients.
  Fold in zucchini and pour into pan sprayed with baking spray.

 Sprinkle top of cake with chocolate chips and nuts. Bake in 350 degree oven for 40-45 minutes.

1/2 cup butter or margarine
1/2 cup oil
1 3/4 cup sugar
1 tsp. vanilla
1/2 cup buttermilk
2 1/2 cups flour
4 Tbsp. cocoa
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. cloves
2 cups finely shredded zucchini
1/2 cup chocolate chips
1/2 cup chopped pecans

Preheat oven to 350 degrees. Cream together butter, oil and sugar. Add vanilla and buttermilk. In separate bowl, combine flour, cocoa, baking soda, salt, baking powder, cinnamon, and cloves. Slowly add to the butter/sugar mixture. Stir in zucchini. Pour into greased and floured 9x13inch pan. Sprinkle chocolate chips and pecans evenly over the top. Bake for 40-45 minutes or until toothpick inserted comes out clean.
This is what happens when you tell your two children to help themselves to a piece for a snack. Next time I think I'll do the serving...for the sake of portion control ;-) Thanks for stopping by today! I love your visits!
