I don't know about your family, but mine gets in a vegetable rut. We frequently have tossed salads with our meals, as well as broccoli. Corn and green beans are others that my family will eat, but sometimes, I need something different... Something to shake things up a bit. That's when I pull out this recipe for Tangy Spinach Salad.
It's really easy to put together. Simply brown some almonds, green onions and sesame seeds. (For the record, I was out of green onions, so I used about 1 Tbsp. chopped red onion.)
Stir them up with some fresh spinach and a tangy homemade dressing. Last night, I paired it with some grilled chicken and Ranch Roasted New Potatoes for a little different spin on our usual chicken dinner.
Tangy Spinach Salad (serves 8)
2 bags or bunches of spinach
3/4 cup slivered almonds
2 green onion (tops only)
1/2 cup sesame seeds
1/4 cup butter
Dressing ( Mix together in jar with lid)
1/4 cup olive oil
1/4 cup white vinegar
1/4 cup sugar
2 Tbsp. soy sauce (Kikkoman)
Brown almonds and green onion in butter. Add in sesame seeds to toast lightly (watch them closely or they will burn). Set aside. Just before serving, toss spinach, dressing and almond mixture together in salad bowl. Serve immediately.
You'll want to wait until just before serving to put together the salad, as the spinach will wilt into the yummy dressing. Do you ever get into a vegetable rut? What do you do to bust out of it?
