Apple Whoopie Pies with Cream Cheese Cookie Butter Filling

Did you know that September is National Apple Month? In honor of this delicious fruit {that and I had some apples that were going south and needed to be baked into something}, I thought I 'd put it into a cookie. And what better cookie than a whoopie pie? These Apple Whoopie Pies with Cream Cheese Cookie Butter Filling are the perfect treat for this time of year.

Here's what you need for the cookies: light brown sugar, butter, egg, flour, baking soda, salt, nutmeg, and chopped apples. {For the filling you'll need Cookie Butter, cream cheese and powdered sugar}

Apple Whoopie Pies with Cream Cheese Cookie Butter Filling
{makes about 2 dozen Whoopie Pies }

Cookies
1 cup light brown sugar
1/2 cup butter
1 egg
1 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg (I used pumpkin pie spice because I threw away my expired nutmeg when I cleaned out my spice cabinet)
1 cup chopped apples (I peeled them first)

Filling
4 oz. cream cheese
1/3 cup Trader Joe's Cookie Butter or Biscoff spread
1 1/2 cups powdered sugar

Preheat oven to 375 degrees. Cream together sugar and butter. Beat in the egg. Sift together the dry ingredients and add to butter/sugar mixture. Beat until well blended. Stir in apples. Drop by tablespoonful onto greased cookie sheet or one with fitted with a baking mat. Bake at 375 degrees for  12-14 minutes. Allow to cool completely on wire rack.

Mix together cream cheese and cookie butter. Add in powdered sugar slowly until fully incorporated. Place a dollop of filling between 2 cookies and press gently. Repeat with other cookies.

The cookies by themselves are delicious, but the filling takes this recipe to whole other realm of yumminess. Not only did these cookies make my whole kitchen smell like autumn, but they put a smile on my face knowing that cooler weather is around the corner.
