Most of our main dishes around here revolve varieties of Mexican, Italian and American food. Rarely do I mix nationalities, but I made an exception last week and made this Green Chile Pasta. I had seen Jamie's Enchilada Stuffed Shells over at Love Bakes Good Cakes and couldn't seem to get pasta and Mexican food off my mind. So, I started mixing a little of this and a little of that (trying to keep track how much of everything I used) and came up with this pasta dish that's sure to make a comeback in our rotation of main dishes.

Green Chile Pasta

1 lb. ground beef
1/4 cup chopped onions
1-2 Tbsp. olive oil
4 oz. cream cheese
1 sm. can chopped green chiles {reserve a little to garnish}
1/2-1 can diced tomatoes
1 sm. can tomato sauce
1/4 -1/2 tsp. cumin
1/3 cup salsa
1/2 cup shredded cheese
1 pkg. farfalle pasta

Cook pasta according to package directions. Meanwhile, in large skillet, cook onions in olive oil until translucent. Add in ground beef and cook until done. Drain off any fat. Cut cream cheese into a few pieces and add to beef. Stir in green chiles, diced tomatoes, tomato sauce, salsa and cumin. Allow the sauce to heat thoroughly. Mix in the cooked pasta {you may not need all of it if you want the pasta dish to be more saucy}. Top with shredded cheese and serve.

This was an incredibly easy recipe to put together and could be adapted to heat things up if you like a little more spice. We loved the creamy, tangy meat sauce combined with the pasta. It was a big hit with the kiddos, and sometimes that's just enough to make my day a little brighter.
