Apple Pumpkin Streusel Muffins

There is something so wonderful about the sights and smells of fall. I look out on the beautiful colors of Autumn dotting the landscapes and take in the pleasing aromas of bonfires and baked goods. These Apple Pumpkin Streusel Muffins embrace the very essence of fall using the bountiful fruits and sweet spices of the season.

The muffins themselves are pretty delicious, but the streusel topping just takes these...well...over the top!

I just pulled a batch out of the oven...can you smell the pumpkin, apple and cinnamon wafting through the air?

Apple Pumpkin Streusel Muffins (makes 24 muffins)

muffins
2 1/2 cups all purpose flour
1 cup sugar
1 cup brown sugar
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped apples
1/2 cup finely chopped pecans

streusel
1/2 cup flour
1/4 cup brown sugar, packed
1/4 cup butter
1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. Prepare muffin tins by spraying with oil or lining with paper liners. Combine first 8 ingredients in large bowl. In small bowl, lightly beat the eggs. Stir in the pumpkin and oil. Add to the flour mixture and stir until just combined. Fold in the apples and pecans. Fill muffin cups  1/2 to 2/3 full. In another small bowl combine streusel ingredients until crumbly texture forms. Sprinkle over the filled muffin cups. Bake for 20-25 minutes or until done.
This made a batch of 24 muffins. It is the perfect amount to eat some now and freeze some for later. Maybe they will even make it onto your fall brunch table. Better yet, come on over! I've got a muffin and cup of coffee with your name on it.
