Potato Chip Cookies with M&Ms and Drizzled Chocolate
Need a fun cookie to take to your holiday parties? These Potato Chip Cookies are deliciously crispy and have that wonderful sweet/salty combination that will leave you wanting more.
Potato Chip Cookie Ingredients
Here's what you need: flour, baking soda, salt, eggs, shortening, brown sugar, white sugar, crushed potato chips and pecans.

They are tasty without any "embellishments", but really shine when you add the M&Ms and/or melted chocolate.

What I like about these cookies is that you could put them on a tray with other treats and their flavor would blend perfectly with them...not overpowering them.

Potato Chip Cookies

1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 cups crushed potato chips
1 cup chopped pecans
M&M candies, melted chocolate, and sprinkles for decorating

Cream together shortening and sugars; add eggs and mix well. Sift together flour, soda, and salt. Add to the shortening/sugar mixture. Stir in potato chips and pecans. Shape into 1-inch balls. Place on ungreased baking sheets and press with a floured fork. Bake at 350 degrees for 10-12 minutes. If desired, press several M&M candies into top before baking. Or, after baking, drizzle with melted chocolate and decorate with sprinkles. Makes about 3 dozen cookies.

  1. Nici, this cookie sounds really interesting! I'm going to a cookie swap in a few days and am looking for a good cookie to transport. I AM a little hesitant when I hear potato chips but usually those types of recipes are always very tasty.
