So, I finally had some time to do a little Christmas shopping by myself yesterday. I don't know about you, but I can get lost for hours in certain stores going from department to department and back again...that is, when I don't have the kids nagging asking me nicely every 5 minutes when we are leaving.

After spending several hours (and more money than I intended) out and about, I needed to make something quick (and cost effective) for dinner. Stopping in at Tom Thumb, I picked up the necessary ingredients for my Tasty Tortellini Soup. Check your local Safeway stores for a coupon for $.75 off the purchase of one (1) package of Barilla ® Tortellini (while supplies last).
Tasty Tortellini Soup (Just 4-Ingredients)
This soup was the perfect end to the hectic day. If I would have been willing to use more than one pot (one for the tortellini and one for the soup), I could have easily had this meal on the table in about 30 minutes. Instead, it took me about 40 minutes...not too bad for a home-cooked meal.

Tasty Tortellini Soup {Just 4 Ingredients}
(makes 6-8 servings)

1 (12 oz.) package Barilla® tortellini
1 (32 oz.) carton chicken broth
1 (24 oz.) jar marinara sauce
1 16 oz.) bag frozen vegetables

Prepare tortellini according to package. Meanwhile, in a large pot, bring chicken broth and marinara sauce to a boil over medium-high heat. Add in the frozen vegetables and return to boil. Reduce heat to low, cover and cook for 10-12 minutes. Stir in prepared tortellini and cook until heated through. Serve with parmesan cheese and crusty bread.

There's just something so soothing about a nice bowl of soup on a cold winter evening. Add some crusty bread and you've got a winning combination. Even my husband, who is not a soup-lover, had a second helping. Both kids loved it too. Score one for Mom!
