Bean & Bacon Soup
Did you know that January is National Soup Month? I absolutely love soup. I had a couple of cans of navy beans in the pantry recently and started thinking through what to do with them. The Bean & Bacon Soup (Campbell's) of my youth started calling my name and I went looking for recipes to make it myself.

I found a recipe that sounded good and started doing a little tweaking to accommodate what I already had on hand. Here is my version... I hope you like it as much as we did!

(Adapted from Food Lush)

2 cans white beans, rinsed and drained
2 carrots, chopped
2 stalks of celery, chopped
1/4 cup onion, chopped
1 tsp. garlic paste
1 can chicken broth
1 small can tomato sauce (start with 1/2 can)
1 1/2 cups water
2 Tbsp. Real Bacon bits, divided
salt and pepper to taste

In a large saucepan, saute onion, carrots and celery until vegetables are softened. Add the garlic paste, chicken broth, tomato sauce, beans, water and bacon bits. Cover and simmer over medium heat for 30-45 minutes. Before serving, use an immersion blender to smooth out the soup, leaving some of the vegetables whole. Salt and pepper to taste. Sprinkle with bacon bits before serving.

The bacon bits give this soup just the right amount of smoky flavor without adding a lot of fat or calories. Served up with some corn muffins, this soup made a perfectly healthy winter's night meal.

  4. I was just thinking today that I wanted to make a soup with white beans! Thanks so much for your sharing your recipe. I will have to substitute vegetable broth for the chicken stock because my hubby is allergic to chicken! Yes! It's a terrible allergy to have!
