I found a recipe that sounded good and started doing a little tweaking to accommodate what I already had on hand. Here is my version... I hope you like it as much as we did!
Bean & Bacon Soup
(Adapted from Food Lush)
2 cans white beans, rinsed and drained
2 carrots, chopped
2 stalks of celery, chopped
1/4 cup onion, chopped
1 tsp. garlic paste
1 can chicken broth
1 small can tomato sauce (start with 1/2 can)
1 1/2 cups water
2 Tbsp. Real Bacon bits, divided
salt and pepper to taste
In a large saucepan, saute onion, carrots and celery until vegetables are softened. Add the garlic paste, chicken broth, tomato sauce, beans, water and bacon bits. Cover and simmer over medium heat for 30-45 minutes. Before serving, use an immersion blender to smooth out the soup, leaving some of the vegetables whole. Salt and pepper to taste. Sprinkle with bacon bits before serving.
The bacon bits give this soup just the right amount of smoky flavor without adding a lot of fat or calories. Served up with some corn muffins, this soup made a perfectly healthy winter's night meal.
