Oatmeal-Buttermilk Pancakes

Good Morning to you! Over Christmas Break, we had one of my son's friends stay the night and I asked him if I should plan on making Cowboy Coffee Cake for breakfast. His response was, "Mom, no, you always make that when we have friends stay over!" Really? He thought we'd be getting doughnuts...I don't think so Mr. Banks!{Can you name that movie?} I decided to try out this healthy recipe for Oatmeal-Buttermilk Pancakes instead, since hungry growing boys make good guinea pigs ;-)
Oatmeal Buttermilk Pancakes
The texture was quite a bit different than what I'm used to for pancakes, but they were delicious and hearty! I added some chocolate chips to up the yumminess factor. Want to know what was music to my ears after I served these to the boys? "Mrs. Higby, can you give this recipe to my mom?" and "Mom, can I have these for breakfast tomorrow too?" Ahhh, keep singing, boys! Keep singing!
Oatmeal Buttermilk Pancakes
Farmhouse Oatmeal Pancakes
from The Wildflower Inn (makes 10-12 pancakes)

2 cups old-fashioned oatmeal
2 1/2 cups buttermilk
2 eggs, lightly beaten
1/4 cup butter, melted and cooled
1/2 cup all-purpose flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2-3/4 cup mini chocolate chips (optional)

Combine the oats and buttermilk and let soak for 15-30 minutes. At the end of that time, add eggs and butter, stirring well. Next add flour, sugar, baking powder, baking soda, and optional chocolate chips. {note: I sprinkled my chocolate chips on the pancakes when they were on the griddle, rather than stirring them into the batter.) Stir gently. Let rise for about 10 minutes. Using a 1/4 cup measuring cup, ladle batter onto medium hot, lightly greased grill. Cook until golden on each side. Serve with butter and warm maple syrup.
Oatmeal Buttermilk Pancakes with Chocolate Chips
I'd say they were a definite hit in our house. Though my son's friend was a bit disappointed that we didn't have Cowboy Coffee Cake, he was happy to down a few of these hearty pancakes. The added chocolate chips made these pancakes all the more special. Do you have a certain breakfast you serve when you have guests staying over night?
