Buttermilk Cinnamon Sugar Mini Muffins

Happy St. Patty's Day! My post today has absolutely nothing to do with this fun holiday, but the recipe will bring a smile to those you love if you make it! Last week, I was trying to use up things we had at home to make breakfast. We had already exhausted the cereal, eggs didn't sound good and neither did oatmeal. I went rummaging through the cookbooks and just started combining recipes to come up with these Buttermilk Cinnamon Sugar Mini Muffins.
Buttermilk Cinnamon Sugar Mini Muffins
These little gems taste a lot like cinnamon sugar donut holes, but they aren't deep fried. They are delicious with a tall glass of milk or a steaming cup of coffee any time of the day. For the sake of being honest with you, my readers, I did try them at several different times of the day. I can assure you they are quite tasty any time of the day ;-).

Buttermilk Cinnamon Sugar Mini Muffins
(makes about 4 dozen)

muffins
2 eggs
1 1/2 cups buttermilk
1 cup vegetable oil
4 cups all purpose flour
2/3 cup sugar
4 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. salt
topping
6 Tbsp. butter, melted
3/4 cup sugar
2 tsp. cinnamon

Preheat oven to 375 degrees. Lightly grease mini muffin pan. Beat eggs then stir in buttermilk and oil. Stir in remaining ingredients until just moistened (batter will be a bit lumpy). Fill muffin cups about 2/3 full. Bake for 15 to 18 minutes, until toothpick inserted comes out clean. While muffins are baking, prepare the topping. In a shallow bowl, mix together the sugar and cinnamon. Place melted butter in a separate shallow bowl. When muffins are done, remove from pan and roll the tops of the muffins in the melted butter, then dip in cinnamon sugar mixture.
