Mexican Fruit Salad

Are you like me and get a little bored with your fruits and veggies? Are you ready to shake up your idea of salads? Then you've got to try this Mexican Fruit Salad. The combination of flavors and textures will definitely wake up your taste buds.

This is a really fun salad to take to pot lucks and gatherings. It would be perfect for that Cinco de Mayo party you're planning, right?

It also makes quite the stunning presentation on a large platter...which is exactly what you'll need if you make the full recipe. With apples, pineapples, strawberries, oranges and avocados on a bed of lettuce, you've got a colorful, sweet salad sure to please the masses.

3 Golden Delicious apples
2 Avocados
1/4 cup lemon juice
1 large pineapple, peeled and cored (or 1-2 cans chunk pineapple)
3 large oranges, peeled
1 bunch Romaine lettuce, shredded
1 pint fresh strawberries
1/2 to 3/4 cup coconut
1 cup sugar
1/4 cup water
1 tsp. lime zest
juice of 2 limes

Remove cores from apples, cut into wedges. Peel avocados; cut into wedges. Combine apples, avocados and lemon juice in bowl, tossing to coat. Cut pineapple into cubes. Slice oranges crosswise. Place shredded lettuce on serving plate. Arrange apples, avocados, pineapple, oranges and strawberries over lettuce. Sprinkle with coconut (or leave on side). Combine sugar, water, lime zest and lime juice in small bowl; mix well. Pour over fruit salad.
