Super Simple Salsa Verde Chicken

Looking for an easy dinner solution? Have I got a winner for you! This simple recipe is both flavorful and relatively nutritious. None of those cream of something soups in this new weeknight favorite. You and your family are going to love this Super Simple Salsa Verde Chicken. 

Super Simple Salsa Verde Chicken

This meal comes together quickly, especially with one of my favorites from Trader Joe's...frozen pre-cooked brown rice. However, you could just as easily slice the chicken and put it in a tortilla for a yummy burrito. 

Salsa Verde Chicken Ingredients

Here's what you need for the main part of this dish: boneless, skinless chicken breasts, salsa verde, and shredded Mexican cheese.

Salsa Verde Chicken Prep

Start by filleting the chicken breasts so that they will cook evenly and quickly. (If you don't want to do this step, you will just need to increase the cooking time by 10-15 minutes.) Next, season the chicken with salt and pepper. Place in baking dish (8x8 or 7x11 for 2 breasts). Pour your favorite salsa verde over the chicken, completely covering it.

Place pan in 350 degree oven and bake for 20 minutes.

Increase temperature to 400 degrees and remove pan from oven. Sprinkle shredded cheese over the chicken breasts.

Salsa Verde Chicken Baked

Return pan to oven and bake for additional 15 minutes or until chicken is done. (Using a meat thermometer, the temperature should register 165 degrees.) The cheese should be melted and the sauce bubbly.

Super Simple Salsa Verde Chicken (serves 3-4)

2 boneless, skinless chicken breasts
salt and pepper 
1 bottle Salsa Verde (use enough to cover the chicken breasts ~ approx. 1- 1 1/2  cups)
1/2 to 1 cup shredded Mexican cheese
rice or tortillas

Preheat oven to 350 degrees. Filet 2 boneless, skinless chicken breasts and place in 8x8 inch baking dish. Sprinkle with salt and pepper. Pour Salsa Verde over the chicken, covering it completely. Bake for 20 minutes. Remove from oven and sprinkle with shredded cheese. Increase the heat to 400 degrees and return the cheese-covered chicken to the oven. Bake for additional 10-15 minutes, or until chicken is done, sauce is bubbly and cheese is melted. Serve over brown rice or sliced in a tortilla.
