Little Peanut Pumpkin Cups

Okay, so I broke down and bought the little orange mellowcreme pumpkins awhile back because that's just what you do in October. Am I right? When I opened them up and popped one in my mouth, I realized that my tastebuds have changed and I needed something a little salty to go with them.

These Little Peanut Pumpkin Cups are going to be the cutest thing on your dessert table this fall!  Just 3 ingredients!

I started thinking what flavors would go well with these sweet nuggets and decided on pairing them with peanut butter cookie dough. These Little Peanut Pumpkin Cups were born...an easy fall treat with just 3 ingredients...two if you leave out the extra peanuts.

Their flavor is kind of like the Candy Corn Mix-up I posted here a couple of years ago, which is like a PayDay bar, which is pretty delicious. I hope you love them as much as I did!

Little Peanut Pumpkin Cups

Here's what you need: Peanut Butter cookie dough, mellowcreme pumpkins, and finely chopped roasted, salted peanuts.

Preheat oven to 350 degrees. Cut cookie dough in 3/4 inch pieces, then cut in half. Roll into a ball and then roll in chopped peanuts. Place ball of dough in lightly greased mini muffin tins. (Sorry I didn't get pictures of all the steps... One tube of cookie dough made approximately 24 cookie cups.) I made some without nuts also.

Bake for 8-10 minutes, when the color is a light golden brown. Remove from oven.

Immediately press a pumpkin into each cookie cup. After cooling for a few minutes, remove to wire rack to cool completely.

Aren't they adorable? I just love how they turned out. They are so yummy too. Your kiddos are going to love them! It's such a simple little treat to make up for parties, or wrap up a few in a cello bag to give to neighbors. No one has to know you didn't make the dough from scratch! Enjoy!

  6. Nici, I have never cared for those little pumpkins or candy corn, but I think that they would be good in the peanut butter cups. I too need a little salty with my sweet. Sugar cookies have always been one of my favs! These all look so cute and are fabulous for Fall! Thanks for sharing with SYC.
