So, when the kids come home from school, what's the first thing they say when they walk in the door? "I'm hungry! What do we have for a snack?" Most days they'll go rummaging through the pantry looking for anything to satisfy the growling monster in their stomachs. On those days you want to be their hero, you'll have made up a batch of these Mini Pepperoni Pinwheels. They have all the taste of your favorite Hormel Pepperoni Pizza in a tiny little snack-size package!
Mini Pepperoni Pinwheels are not only perfect for after school snacks, but they'd also make a great little appetizer at your next party... hello March Madness! Delicious with or without sauce, these little gems are loaded with pepperoni flavor!
Here's what you need: crescent rolls, Hormel pepperoni, fresh spinach, mozzarella cheese, egg, Italian seasoning and pizza sauce for dipping.
Start by dicing up your spinach and pepperoni.
In small bowl combine pepperoni, cheese, egg yolk and seasoning.
In separate bowl, whisk egg white until foamy... I love this part. I was always fascinated watching my dad beat eggs for our Saturday morning big breakfasts, studying the up, down and around motion of the fork. Now, my kids watch in amazement as I whip up an egg white into a frenzy without spilling it over the sides of the bowl. It's the little things...
Next, crack open the crescent roll tube and unroll the dough. Make 4 rectangles by pinching together the triangles.
Divide and spread the filling evenly among the 4 dough rectangles, leaving a 1/4 inch border.
Jelly-roll style, roll up the filled dough. Pinch together the seam.
With a sharp knife, slice each roll into 6 equal portions.
Place rolls on prepared baking pan, cut side down.
Brush egg white over the tops of the pinwheels with a pastry brush.
Bake for 12-14 minutes, or until golden brown. Serve up with warm pizza sauce!
