Avocado Chocolate Chip Oatmeal Cookies ~ Cookie of the Month

Welcome to May's Cookie of the Month post! The special ingredient for May is chocolate chips, in honor of National Chocolate Chip Day on May 15th. While I could have just posted a standard chocolate chip cookie, I had an extra avocado that needed to be used. (I hate to let those go to waste.) The wheels started spinning and before I knew it, I had made up a batch of these Avocado Chocolate Chip Oatmeal Cookies.

No one has to know the secret ingredient in these yummy Avocado Chocolate Chip Oatmeal Cookies.

Let me just say, they were devoured by my peeps. I hope you love them as much as my non-avocado-loving people did! They are a soft cookie, full of chocolatey oatmeal goodness. I may have even had a couple for breakfast. ;-)

No one has to know the secret ingredient in these yummy Avocado Chocolate Chip Oatmeal Cookies.

What's great about using avocado is that it replaces some of the less-than-healthy fats with good heart-healthy fats, and you can't taste the difference. Avocados are also higher in potassium than bananas and they are loaded with fiber and antioxidants. I big puffy heart avocados.

Avocados take these cookies to the next delicious level!

Here's what you need: avocado, butter, brown sugar, eggs, vanilla, all purpose flour, baking soda, baking powder, salt, quick oats, and chocolate chips.

Lots of health benefits for substituting avocado for other fats.

Start by creaming together mashed avocado, butter and sugar.

Next add in eggs, one at a time, and then vanilla.

The dry ingredients come next, followed by the oats and chocolate chips.

Drop by teaspoonful onto baking mat and flatten with a glass dipped in water.

Bake at 350 degrees until golden, or about 18 minutes.

Remove to wire rack to cool completely. Serve with milk or coffee.


Avocado Chocolate Chip Oatmeal Cookies
(makes about 3 dozen)

1 medium ripe avocado
1 stick salted butter, softened
1 1/2 cups brown sugar
2 eggs
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. baking powder
1 1/2 cups quick oats
1 1/2 cups mini chocolate chips

Cut avocado in half and scoop the flesh into bowl; mash up with fork. Cream together the mashed avocado, softened butter and brown sugar until it is fluffy. Add eggs one at a time, followed by vanilla. Stir until thoroughly incorporated. Slowly mix in flour, baking soda, salt and baking powder.  Stir in quick oats and mini chocolate chips just until combined.  Cover and chill for at least 1 hour.

Preheat oven to 325 degrees. Line a baking sheet with baking mat or parchment paper. Drop spoonfuls onto the mat 2 inches apart. Flatten the dollops with glass dipped in water. Bake for 18 minutes, or until golden brown. Remove to wire rack to cool completely. Repeat with remaining dough. Makes about 3 dozen cookies.

  1. These have got to be good! A creamy avocado would certainly lend a wonderfully soft texture - my favorite kind if cookie. I'm looking forward to trying these soon - now the avocados need to go on sale!
