Chocolate Raspberry Oatmeal Cookies ~ Cookie of the Month Club

Well, I missed out on the Cookie of the Month for June, but I'm back this month with the berry theme! I'm excited to share with you the recipe for these decadent Chocolate Raspberry Oatmeal Cookies. They are soft and chocolatey, with bits of raspberry throughout.

I've been finding raspberries on sale a lot lately, so naturally, they became the chosen berry for this month's theme.  Sometime soon I'll be sharing a recipe for a Creamy Raspberry Sherbet too. But today, it's all about the cookies.

These decadent Chocolate Raspberry Oatmeal Cookies are soft and chocolatey, with bits of raspberry throughout.

Chocolate Raspberry Oatmeal Cookies
(makes about 2 dozen large cookies)

1 cup all purpose flour
1/4 cup quick oats
1/2 tsp. baking soda
1/4 tsp. sea salt
1/4 cup cocoa
1/2 cup butter, at room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp. vanilla extract
1/2 cup mini chocolate chips
1/2 cup fresh raspberries, rinsed and patted dry (or frozen berries would work too)

Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a baking mat. Combine first 5 dry ingredients in medium bowl, set aside. In large mixing bowl, cream together butter and sugars. Add in egg, beating until incorporated, followed by the vanilla extract. Gradually add dry ingredient mixture to butter mixture, beating just until combined. Fold in chocolate chips and raspberries, being careful not to mash the raspberries. Chill dough for at least 30 minutes. Scoop out rounded tablespoonfuls onto lined cookie sheet, generously spacing them. These cookies will spread, so make sure there is plenty of room between them. Bake for 11-13, until cookies are set, but soft in the middle. Be careful to not over bake. Remove from oven and let cool for about 3 minutes on baking sheet before moving to wire rack to cool completely.

Once you bite into these cookies, you'll be in raspberry heaven! Every bite is punctuated by the sweetness of the raspberries and the nuttiness of the oats. Adding in some oatmeal to cookie dough is one of my favorite ways to bring in a little texture to the cookie.

They were the treat of choice to indulge in with my Folgers® Iced CafĂ© after making up the USA Flag Picture Tray I showed you last week. They were also a big hit with my family... even the "cooked fruit haters". I caught my husband sneaking off with a couple of cookies and a tall glass of milk more times than he would like for me to share on here ;-)

If you are a raspberry fan, you will love the taste of these cookies. They are delicious on their own, but they would be positively divine with a scoop of vanilla ice cream sandwiched between them. Hey that gives me an idea... I think I need to whip up another batch... and buy some ice cream.
