For some reason, I just don't feel right about busting out the cans of pumpkin until right around October. It's not that I don't love all things pumpkin, because I do. I think I associate pumpkin spice flavors with cooler weather (which I love), and I feel a bit let down when the pumpkin flavor isn't in conjunction with the fall leaves changing colors and the crispness in the air. Am I the only one who feels this way?
Here's what you need for these simple cookies: yellow cake mix, pumpkin pie spice, canned pumpkin and mini chocolate chips.
Simply mix up the dry cake mix with the pumpkin pie spice and canned pumpkin.
Fold in the chocolate chips.
Drop by heaping teaspoonfuls onto greased cookie sheet and bake at 350 degrees for 10-15 minutes. I told you they were easy.
Impossibly Easy 4-Ingredient Pumpkin Chocolate Chip Cookies
(about 3 dozen cookies)
1 yellow cake mix
2 tsp. pumpkin pie spice
1 (15oz.) can of solid packed pumpkin (not the one with spices mixed in)
3/4 cup mini chocolate chips
Preheat oven to 350 degrees. Spray cookie sheet with cooking oil. In large mixing bowl, combine cake mix, pumpkin pie spice and pumpkin. Stir in chocolate chips. Drop by teaspoonful onto prepared cookie sheet. Bake for 10 to 15 minutes. Remove from oven and cool completely on wire rack. Store in airtight container.
