Impossibly Easy 4-Ingredient Pumpkin Chocolate Chip Cookies ~ Cookie of the Month

Well, it's Fall... so that means my favorite season is here... Pumpkin Season! It's also the first Monday of the month, which means that it's Cookie of the Month time. I was thrilled when I found out that the theme would be pumpkin. I needed to bring a treat to our small group last week and I had the perfect recipe to try out... these Impossibly Easy 4-Ingredient Pumpkin Chocolate Chip Cookies. These cookies were every bit as tasty as my Great Pumpkin Cookies, but so much simpler to make. They were a big hit at our gathering, so I know you will love them too.

For some reason, I just don't feel right about busting out the cans of pumpkin until right around October. It's not that I don't love all things pumpkin, because I do. I think I associate pumpkin spice flavors with cooler weather (which I love), and I feel a bit let down when the pumpkin flavor isn't in conjunction with the fall leaves changing colors and the crispness in the air. Am I the only one who feels this way?

Fall flavored cookies couldn't be simpler than these Impossibly Easy 4-Ingredient Pumpkin Chocolate Chip Cookies

Here's what you need for these simple cookies: yellow cake mix, pumpkin pie spice, canned pumpkin and mini chocolate chips.

Simply mix up the dry cake mix with the pumpkin pie spice and canned pumpkin.

 Fold in the chocolate chips.

Drop by heaping teaspoonfuls onto greased cookie sheet and bake at 350 degrees for 10-15 minutes. I told you they were easy.

Impossibly Easy 4-Ingredient Pumpkin Chocolate Chip Cookies
(about 3 dozen cookies)

1 yellow cake mix
2 tsp. pumpkin pie spice
1 (15oz.) can of solid packed pumpkin (not the one with spices mixed in)
3/4 cup mini chocolate chips

Preheat oven to 350 degrees. Spray cookie sheet with cooking oil. In large mixing bowl, combine cake mix, pumpkin pie spice and pumpkin. Stir in chocolate chips. Drop by teaspoonful onto prepared cookie sheet. Bake for 10 to 15 minutes. Remove from oven and cool completely on wire rack. Store in airtight container.

Have you started baking with pumpkin again, or do you use pumpkin year-round in your baked goods? Am I the only one who doesn't bake with pumpkin until Fall?

  1. I love cookies made from cake mix but I didn't know you could make pumpkin cookies with it - I'm going to have to try it soon!
