Happy Wednesday! Thanks for stopping by the 73rd Creative Ways Link Party! I am truly appreciative that you choose to spend part of your week with us, sharing what you've been working on. I'm a little out of sorts today, as I had to take my cat to the vet for suspected UTI. My computer has also been giving me fits lately. It seems I've overloaded it with pictures and now my "startup disk is full"... completely full. I'm trying to figure out the best solution, since buying a new computer is not exactly in the budget at the moment.  I wish I were more of a "techie". Anybody out there ever moved their IPhoto Library over to an external hard drive? I think that's my next move. Anyway, you didn't come here to hear about my troubles... you came here to party, right? Great! I could use the distraction! ;-)

    Food for the Soul ~ Matthew 11:28-30

    Hi Friends! Happy Sunday to you! I'm so happy to have you stop by for a quick visit. In this busy season of many time commitments, as well as navigating relationship waters, I am so blessed by the words of Jesus in Matthew 11:28-30. He says, "Come to me, all who are weary and heavy burdened, and I will give you rest. Take my yoke upon you and learn from me, for I am gentle and humble in heart, and you will find rest for your souls. For my yoke is easy and my burden is light."


    Friends, I confess to you that I often try to do things on my own, and I fall flat on my face. I take on these huge burdens (mostly worrying about things I cannot change) or multiple commitments to my time. Guess what? I end up frazzled and snippy with those who I am called to love and care for. How much simpler and sweeter would life be if I would just accept Jesus' offer and learn from Him? I have to remind myself daily to do just this... follow Him and His ways. Are you struggling under a heavy burden this week? I hope these words of Jesus will be of comfort to you.

    Creative Ways Link Party #72 and Double Features

    Welcome, welcome! So glad you are here to join us at the Creative Ways Link Party this week! Hope you've had a great week so far. It's been a busy one for us, but that is nothing new. With the start of school and fall sports, the schedule is bound to fill up. Having just finished the 14 day Make Over Your Mornings course by the Money Saving Mom, Crystal Paine, I've been working on being more purposeful with my time in the mornings before the kids are up and about. I have enjoyed some rich quiet times as well as some goal-setting sessions. The challenge is always the follow-through with me... keeping the good habits going. Here's to a productive, creative week! Let's see what's been keeping you busy!

    The tutorial for this  DIY Monogram and Pom Pom Pillow by Greco Design Company couldn't be easier. I adore the pom poms! (That pouf is pretty sweet too!)

    I'm drooling over these Peanut Butter Chocolate Mallow Bars by Eclectic Red Barn. All the best flavors wrapped up in one delicious treat!

    This Burlap and Lace Runner by Domestically Speaking is absolutely darling. I love the delicate touch of the lace with the rustic burlap.

    Best Ever One-Pan Roasted Chicken by Run to Radiance showed us that it doesn't need to be complicated to be delicious. Love the simplicity of this recipe.

    My Love 2 Create has done it again with these Succulent Planters from Light Fixtures . This is such a unique way to bring some plant life inside and to repurpose cast offs! You have to see all the ways she has displayed these planters!

    I'm a big fan of saving dishes when I'm cooking for the family. One Skillet Enchilada Bake by Lou Lou Girls sounds like a perfect way to do just that while enjoying a tasty meal!

    This Monogrammed Cross Stitch Pumpkin by Dukes and Duchesses is almost too cute for words. I'm a such a sucker for the orange and turquoise combo.

    Bring out the ice cream! I'm ready to top this Blueberry Apple Crumble by Everyday Made Fresh with a big ol' scoop and devour it immediately!

      Food for the Soul ~ Psalm 37:23-24

      I had the opportunity to hear a wonderful message this week by a woman named Christine Caine. It was the last evening of a recorded session from a previous year's IF Gather. I was particularly moved by her description of the Israelites standing on the edge of the Promised Land... not wanting to go where the LORD had been leading them because of their fear. Their fear was greater than their faith. I wonder... how many of us that applies to also. (picture me with both hands raised) Christine said that some of us are "so scared of what will be that we hold onto what was", whether it was painful or joyful. Our Heavenly Father is "not the God of 'I was'... He is the God of 'I am'." He is with us right now... right in the middle of the mess and the broken hearts, right on the precipice of healing. God told Joshua to set his foot into the promised land... to be strong and courageous... I know He is telling us the same thing. Is there something you know you need to do, but have been stuck for fear of what will happen? Perhaps it's time to step out in faith!


      Praying you have the kind of week where you know with all your heart that your steps are guided by our Loving Father. May you have boldness and faith to move forward through difficult circumstances, knowing that the LORD is holding your hand.

        Stubb's Green Chile Pork Burritos with Creamy Avocado Sauce

        {Stubb's Legendary Bar-B-Q provided sauces for this recipe, but all opinions are 100% my own.}

        At the start of the fall school and sports seasons, I typically declare it Crockpot Season too. With shuttling kiddos to soccer or baseball practices right around the critical time I should be cooking up something for dinner, my slow cooker is a true workhorse. When I can put together a meal with just a couple of ingredients... even better. That is exactly why Stubb's Green Chile Pork Tacos/Burritos will be in the dinner rotation.

        These Green Chile Pork Tacos/Burritos explode with flavor and couldn't be easier to make! Crockpot Heaven!

        The meat prep for these burritos gets me in and out of the kitchen in no time flat. If we want to add in some lettuce and tomatoes (for more nutritional value), I can get those chopped up earlier in the day ready for when we put together the burritos.

        Just 2 ingredients for the best tasting Green Chile Pork! Perfect for tacos & burritos!

        Here's what you need for the meat: pork loin roast and Stubb's Green Chile Sauce. That's it! You'll probably want some tortillas, shredded cheese, lettuce and tomatoes too. If you want to make the Creamy Avocado Sauce, you'll need some sour cream and an avocado too.

        These Green Chile Pork Tacos/Burritos explode with flavor and couldn't be easier to make! Crockpot Heaven!

        Stubb's Green Chile Pork Tacos/Burritos with Creamy Avocado Sauce
        (adapted from Stubb's Legendary BBQ)

        1 (2 lb.) Pork Loin Roast
        1 bottle Stubb's Green Chile Marinade Sauce

        8 oz sour cream
        1/2 ripe avocado
        1/4 cup Stubb's Green Chile Sauce

        shredded lettuce
        chopped tomatoes
        flour or corn tortillas

        Place pork loin roast in crock pot; pour 1/2 of the bottle of Green Chile Marinade Sauce over the top. Put the lid on and cook on low for 5-7 hours or until pork falls apart. Remove from liquid to cutting board. Shred the meat and return to sauce to allow it to soak up the flavors.

        While the pork is cooking, blend together the sour cream, avocado and Green Chile Marinade Sauce until smooth. Cover and refrigerate until ready to serve.

        When the meat is ready, place a scoop of pork in the middle of a warmed tortilla and top with Creamy  Avocado Sauce, shredded cheese, lettuce, and tomatoes.

        Serve with rice and beans, or serve the pork over a bed of lettuce, for a delicious taco salad.

        We absolutely loved the flavor Stubb's Green Chile Marinade Sauce infused into the meat. We've also tried this sauce with chicken and beef... both with great success. The Creamy Avocado Sauce definitely completes the dish. This recipe is perfect for tail-gating too!

        The only way dinner could be easier is if it was takeout. But, since we are all trying to eat healthier and save money, this is the better way to go. Give it a try! Your family will thank you!

        Have you ever had a time when you felt like what you were doing was futile? Perhaps it was a ministry you were involved in that was just plain hard. Maybe it was a difficult relationship with a loved one. Perhaps you're in the trenches of motherhood with little ones or teenagers. It is during these trying times we have to trust that the prayers we are praying, the love we are pouring out and the service to others is making a difference... even if we don't see it immediately. Do not give up before you see the harvest!

          Lemon Crackle Cookies ~ Cookie of the Month Club

          Welcome to another edition of the Cookie of the Month Club. Can you guess what the special ingredient is for this month? Yep, you got it! The lovely lemon... this citrus fruit adds brightness to every dish and dessert it touches. Lemon Crackle Cookies are my contribution this month.

          These Lemon Crackle Cookies are  light, slightly crunchy on the outside, and tender on the inside... everything that a lemon cookie should be.

          I was able to make them just in time for my parents' extended stay when my dad had his knee replacement surgery here in town. It was a fun treat to present to my mom, who goes crazy for anything lemon flavored. These little cookies did not disappoint.

          These Lemon Crackle Cookies are  light, slightly crunchy on the outside, and tender on the inside... everything that a lemon cookie should be.

          Lemon Crackle Cookies
          (makes about 3 dozen)

          1/2 cup butter, softened
          1 cup sugar
          1 egg
          1 Tbsp. lemon juice
          1 Tbsp. lemon zest (half that amount if you just want a light lemon flavor)
          1/2 tsp. vanilla extract
          1/4 tsp. sea salt
          1/4 tsp. baking powder
          1/8 tsp. baking soda
          1 1/2 cups all-purpose flour
          1/2 cup powdered sugar, sifted for rolling the cookies.

          Preheat oven to 350 degrees. Lightly grease cookie sheets or line with baking mat or parchment paper.

          Mix together dry ingredients (salt, baking powder, soda and flour) and set aside. In large mixing bowl, cream together butter and sugar until light and fluffy. Add in egg, lemon juice, zest and vanilla extract, beating until combined. Scrape down the bowl and slowly add in the dry ingredients, stirring until just combined.

          Pour powdered sugar into a shallow dish. Using a tablespoon or cookie scoop, portion out 30-36 cookie dough balls. Roll into ball shape and then roll into powdered sugar. Place 2 inches apart on cookie sheets, allowing enough room for the cookies to spread. If dough is too sticky when rolling into balls, dust your hands with powdered sugar first.

          Bake for 8-10 minutes, or until the bottoms of the cookies are golden. Remove from oven and allow to rest on cookie sheet for a couple of minutes. Transfer to wire rack to cool completely. Can be stored in airtight container.

          Food for the Soul ~ Nehemiah 9: 17b

          Hi Friends. I hope you've had a wonderful week, and are enjoying some sweet times this Labor Day weekend. I was able to clean uninterrupted for the first Saturday in a long time. There were no baseball practices that I had to drive to, no soccer games to attend. Just me and my bottle of Fabuloso! I wish I could say that I got the whole house clean, but I didn't. I did make a good-sized dent in my to-do list for the day. We're expecting my parents to roll in sometime this afternoon to stay a couple of days. (so I might get a couple more hours of housework/decluttering in). My dad has a follow-up appointment with his knee surgeon on Tuesday... we're hoping he is pleased with the progress. In the meantime, we'll just take advantage of the time we have to spend with them. As much of an inconvenience it has been for my parents to have to do the back and forth trip for doctor appointments, I consider it a gift from the Lord. It has allowed our family precious time with my parents, which should not be taken for granted. I am all too aware of how fleeting life is. 


          On another note, to say that I have been touched by the IF Equip Nehemiah study I'm participating in would be an understatement. I have been challenged and stretched in so many ways. This particular verse stood out to me this week. Nehemiah shares about the sins of the Israelites and how they had turned their backs on God time and again and had become stiff-necked... to the point of preferring slavery to obedience and blessing. And then it reads, "But you are a forgiving God, gracious and compassionate, slow to anger and abounding in love." In the 8th through 10th chapters, we see the Israelites confessing their sins and praising God for His mercy, love and faithfulness. They are working side by side rebuilding the walls of Jerusalem, all the while facing attacks from their enemies. It might have been easier to give up and go back to slavery, but instead, they worked with all their might... brick by brick to rebuild what had been torn down. There seems to be a bit of a revival and re-dedication of their lives going on... Boy, could we use that in our own lives... Am I right?

          What if each person... in every family... among all the nations in the world... what if we put our name in that verse? What if we spoke those words of healing right into our very own hearts and asked the Lord to grow us into the kinds of people that reflect these attributes of His? Can you imagine how much of the world's hurts could be healed if we all did this? What would it look like if we were all forgiving? How about compassionate? Slow to anger? Most of all, what if we were all abounding in love? What a wonderful world this would be!

          Now, I know what you might be thinking... "This is simply not possible." Well, another one of my favorite verses tells us how it is possible... Mark 10:27

          "Jesus looked at them and said, "With man this is impossible, but not with God; all things are possible with God.""

          Friends, I am praying this verse in Nehemiah for all of us this week. Is there some other way I can pray for you?
