When the rain is pouring and the thermometer flirts with freezing temperatures, there's nothing better than good, old-fashioned comfort food. It warms the bones and fills the bellies. My guys are not big soup eaters, much to my chagrin. However, they are always up for a hearty, cheesy dish. This Loaded Chicken and Potato Casserole is a new favorite for all of us.

This Loaded Chicken and Potato Casserole is the ultimate comfort food! Packed with flavor and easy to prepare, it's bound to be a new favorite for your family.

With simple ingredients, and 'cubing' potatoes and chicken as the only "technique", this casserole was a cinch to pull together.

Potatoes, Chicken and Bacon come together in perfect harmony in this dish!

The hearty ingredients can stand alone as dinner, or you could serve it up with a side salad if you truly felt like it needed a little "health" kick. (wink, wink)

When I'm at a loss on what to make my family for dinner, baked potatoes tend to be my go-to meal. My husband isn't usually satisfied with "just a potato", so the Loaded Chicken and Potato Casserole is now a perfect stand in... partly because this has the added protein with the chicken.

Partly because...this comfort dish is packed with flavors, from the smoky bacon to the slight zip of the Tabasco.

Loaded Chicken and Potato Casserole

1 1/2 lbs. chicken breast, cubed
5 cups cubed potatoes
1/3 cup olive oil
1 tsp. sea salt
1 tsp. fresh ground black pepper
1 Tbsp. garlic powder
1 tsp. dried parsley flakes
few dashes of Tabasco sauce
1 1/2 cups shredded cheddar cheese
1/2 cup chopped cooked bacon
chopped green onions

Preheat oven to 400 degrees. Lightly grease 13x9 inch casserole pan. In large bowl, combine olive oil, sea salt, pepper, garlic powder, parsley flakes and Tabasco sauce. Stir in potatoes and coat completely. Pour potatoes into prepared pan, reserving the leftover oil mixture.  Bake for 35 minutes, stirring every 15 minutes. While the potatoes are baking, stir the chicken into the oil mixture to marinate. After the 35 minutes, remove pan from oven and arrange chicken pieces on top. Return to oven and bake for 15-20 minutes, stirring once during the baking time. Remove from oven, sprinkle with cheese, chopped bacon and onions. Return to oven for 5 more minutes, or until cheese is melted and chicken is completely done. Top with sour cream and more chopped green onions for garnish.

Hello, dear friends! Thanks so much for stopping by today. I hope that you have had a wonderful week. We're coming to the end of the Thanksgiving weekend, and my heart is overflowing with gratitude. Although our Thanksgiving did not turn out quite like I had hoped it would, it was still a sweet day with my little family. We then enjoyed a quiet weekend at home... no outside commitments, no Black Friday sales...just a cozy time with those I love most. I'm so grateful to my Heavenly Father. We have all that that we need and way more than we deserve when we are called His children.

    A Tree Classics Wreath Giveaway

    Hi Friends! Well, Thanksgiving is next week. Can you believe it?!? If you decorate for Christmas you will fall into two camps. Those who decorate before Thanksgiving and those who wait until after. I have always been an "after-Thanksgiving" kind of gal, but the last couple of years I have found myself getting antsy to move into the most joyous of seasons... not because I don't want to celebrate all there is in giving thanks. I just really love the Christmas season so much. I suspect many of you feel the same way. That's why I'm so excited about today's Tree Classics Wreath giveaway!

    I was recently contacted by the good people of Tree Classics to participate in their 40th Anniversary event with 40 bloggers giving away 40 Tree Classics products. They have a long history of designing the World's Finest Artificial Christmas Trees and have started offering wreaths, garlands and other accessories as well. I was thrilled to receive one of their 32" Pre-Lit Noble Fir Wreaths to check out for myself.

    Made with the Real Feel™ needles, their trees, garlands, and wreaths are truly beautiful. I was blown away by how real-looking the Pre-Lit Noble Fir Wreath was in person. When it came out of the box, all that was needed was a little fluffing.


    Most of the wreath is composed of the Real Feel ™ needles, with just a few of the others tucked in for filler. The wreath is full and genuinely looks like real Noble Fir branches arranged into a wreath.

    As beautiful as it is by itself, I will probably add a big, gorgeous bow or perhaps some poinsettias to really make it pop on my front door. (First, I need to put away the fall decor... a chore for this weekend.) These wreaths come pre-lit, so all you have to do is personalize it with your own flair. Here are a few ideas:

        Happy Wednesday, Y'all! How has your week been? We've had a pretty big week over here... appliances that rebelled and were fixed, a birthday for my oldest (I can't believe he's 14!), I finally upgraded a new iPhone, and that led to hours long conversations with the good people of Apple, which ended up with me finally taking care of some of my computer issues.
